Kung Pao Tofu

There was a time when I ate at Chinese vegetarian restaurants constantly. I loved those places! Most of them have a full menu that looks like a normal Chinese restaurant menu, but every item is totally meatless. The kung pao tofu was my favorite! Unlike many of the dishes that were made with fried tofu, this dish used baked tofu. It was awesome! Baked tofu is delicious, and perfect with the finely diced and stir-fried veggies and crispy peanuts you find in any Kung Pao dish....

Lazy Girl Couscous Tabbouleh

I know… right? She with a food blog hates to cook! OK, so this is a new thing, almost certainly tied to pregnancy and my less-than-predictable cravings and aversions and whatever that “meh” feeling in-between is, but every night when I put away my laptop and shuffle into the kitchen, I’m dreading it. Perhaps it’s that we plan in advance, always shopping for the week’s dinners on Sunday afternoon; by the time that Tuesday rolls around, the Mediterranean fish that sounded oh, oh so healthy on Sunday sounds positively disgusting....

Orzo Salad With Crispy Prosciutto

I have always used prosciutto in sandwiches and pizzas. But crispy prosciutto is a whole new revelation to me. It is crispy, salty, and savory, like crispy bacon but more subtle in flavour and exotic. It adds the necessary crunch to the salad and a whole lot of flavor. Not every salad needs a dressing. Sometimes just seasoning the salad lets the other components shine. EVOO, fresh lemon juice, fresh parmesan, salt, and pepper works as dressing in this recipe....
