The initial idea behind this post was “100 Vegan Sandwiches for Your Lunchbox.” With back to school time upon us, it seemed like a good idea. It quickly became apparent that that wasn’t going to work. Delicious as it may sound, I just can’t recommend placing a sandwich with a name like “Sloppy Black Eyed Peas” in your kid’s lunchbox. Lunch ladies all around the world would soooooo have it out for me. So, let’s just call this “Irresistible Vegan Sandwiches,” which every one of these is. I’m not a parent, so I really can’t say which ones are kids’ lunchbox packable. You can figure that out, and eat the ones that aren’t for dinner. I assume zero liability for kids being sent home after starting a green chile-chipotle cilantro dressing-themed food fight. ;)
