Having Rebecca of My Natural Family write a guest post for me is such a treat. She and I have quite a lot in common, starting with our love for aprons, paleo food and, well, cookies.  With these cookies, she has absolutely nailed it! I love almonds and chocolate so these Paleo Chocolate Chip Cookies might be my newest addiction – cannot wait to try them.  – Cheryl I’m so excited today to be guest posting here on 40 Aprons, especially cause that means I get to share my love of Paleo food with some new people. Although, I would like to think that I’m not new to all of you! Please comment below and let me know if you’ve made one of my recipes before and what you thought of it. I happen to think I’m the perfect guest blogger for 40 Aprons because our blogs are quite similar because we both blog about Paleo and Whole 30 recipes with some health posts thrown in there too. And her About Me page leads me to wonder if she has some Italian blood and I’m 3/8th Italian. Plus, it looks to me like Cheryl is good at the business side of things and I was an accountant in my former life, so we’re practically twins. I do envy her apron collection though. Seriously. My grandma was a farmer’s wife and had this ordinary 50’s style apron when I was a kid and I thought it was the coolest thing ever and I’ve never been able to find one like it since. I only have two, totally worn out aprons with holes in them that I wear all day every day. Seriously. I go shopping in them and forget I have them on and people come up to me and think I work at the store because I have my apron on. Food blogger woes . . .   Anyway, we better talk about the actual recipe. One of my favorite food combinations is dark chocolate and almonds – ever tried dark chocolate covered almonds…if you haven’t – DON’T! You won’t be able to stop eating them, and I don’t want you cursing me when you have a tummy ache due to addictive deliciousness overload.

Since I love the dark chocolate and almond combination, and I LOVE cookies, I decided to combine the two (it was kind of a no-brainer).  The end result is these insanely delicious almond flour Paleo chocolate chip cookies. If you’ve tried a lot of other Paleo cookie recipes, you will know that they often only contain one type of flour. Well, I don’t think there is one perfect type of Paleo flour and I think to get the best qualities of each type of flour, it is best to mix about three different Paleo flours. You will see me use almond flour, coconut flour and arrowroot powder together in a lot of my blog desserts cause I think they make a winning combination! These cookies are also a great treat to take to your favorite gathering.  I don’t know about you, but I want to eat treats with everyone else when I am at fun get-togethers, but I don’t want to completely derail my healthy eating goals – which is why I love these types of cookies.

I would love to know what occasion you make these cookies for and if you like my flour mix. I would also love to know how many aprons you have, even though I know you’ve probably already told Cheryl, you haven’t told me, and I would love to know if anyone has more than she does (her About Me section says she has 28 aprons!).
