When I tell you this is a favorite of mine, I’m absolutely NOT exaggerating. I’ve been making these for years – they may or may not have been the signature cocktail at my oldest son’s 2nd birthday party (don’t mind me as I think about how we just had his 7th birthday party a couple of months ago). Anyway, that should tell you how amazing these mimosas are!This recipe takes the classic mimosa recipe and turns it into a crisp, refreshing cocktail that fully embraces all of the goodness of fall. The drink itself is made up of just 3 ingredients – delicious apple cider, bubbly sparkling wine, and warm cinnamon whiskey. We go a step further, though, rimming the glasses with rich maple syrup and cinnamon sugar, and then garnishing the drink with apple slices and cinnamon sticks. Those are all optional, though. If you don’t feel like being that extra with your mimosas, don’t worry – they’ll taste just as amazing without all of that.Whether you dress up the glasses or not, this recipe couldn’t be easier to make. Seriously. Just dump all the liquids into a pitcher, stir, and serve. That’s it. Since it’s so easy, you can also scale it up to accommodate a big group with no problem. Perfect for holiday parties, Christmas brunch, or Thanksgiving-morning chaos.
Chef’s Tips
If you want to cut back on the alcohol a little, you can get the same deliciously cinnamony apple cider mimosas without using any cinnamon whiskey. Just use a few drops of food-grade cinnamon essential oil instead! What sparkling wine should you use for mimosas? Use something dry since you’re combining it with sweet apple cider – prosecco, cava, and champagne are all great options. Also, leave the expensive stuff for another time. Since you’re mixing the wine with other ingredients, a mid-range will work perfectly.I don’t recommend preparing the mimosas in advance. The sparkling wine can go flat which will make the whole drink taste off. If you want your mimosas really cold, chill your wine and apple juice ahead of time, and serve the drinks immediately after mixing them.For a really over-the-top gourmet flavor, infuse your apple cider with whole cinnamon sticks and sprigs of fresh rosemary at least 12 hours before preparing the mimosas. Infusing is simple, by the way. All you need to do is pour the apple cider into the pitcher you plan to use, add rosemary and cinnamon sticks, give it a quick stir, and then put the pitcher in the fridge. Now let it sit 12 hours (up to 24 hours) before making the recipe as written below!
