Ingredient notes and substitute suggestions
Potatoes: Use a waxy or less starchy variety of potatoes. Unlike a classic American potato salad in which potatoes are partially mashed, the potato cubes should retain their shape in Armenian potato salad. I have used Yukon gold potatoes. Onion: Use red onion in this recipe. Garlic: Garlic powder can be used too but fresh garlic will give better flavor. Fresh herbs: I have used fresh mint leaves and parsley. Dried mint powder can also be used. Other fresh herbs that go well in this salad are cilantro and green onions. Red chili flakes and powder: I have used both red chili flakes and red chili powder to add heat as well as color this potato salad. For red chili powder, you can use cayenne pepper, Kashmiri red chili powder, paprika, etc., depending on how much heat you want to add to the salad. You can skip one or both of them if you want a milder flavor.

Step 2: Make salad dressing by mixing extra virgin olive oil, fresh lemon juice, red pepper flakes, red chili powder, ground black pepper, and salt in a small bowl. Step 3: Put boiled potato cubes, sliced onions, and chopped fresh herbs in a large salad bowl. Pour salad dressing on top. Step 4: Gently toss. Check and adjust the seasoning.
