Be sure to use a ripe avocado! Since it’s such a prominent ingredient here, being too ripe or not ripe enough will really have an impact.The lime juice will help prevent the avocado dressing turning brown, but the way you store it matters, too. For maximum freshness, you’ll need an airtight container and plastic wrap. Transfer the dressing from the food processor to the jar, then cover the top of the dressing with a sheet of plastic wrap. Press it directly onto the surface of the dressing. Seal the airtight container and refrigerate the dressing. It’ll keep this way up to 5 days!You can play with the amount of water you use to get your perfect dressing consistency. More water will give you a thinner, more liquidy dressing that’s great for drizzling over salads or a Southwestern egg roll in a bowl. For a thicker dressing you could spread on toast, use less water.
