Bacon – To prepare the bacon for this recipe, start by chopping it into small 1/2-inch pieces. These bacon bits will make the perfect topping for your bacon gravy later on. Once cooked, reserve much of that delicious rendered bacon fat for the base of this recipe. Milk – I used whole milk, but any milk will work in this recipe. Whole milk is my personal favorite and makes for an ultra-rich and comforting gravy. Though I’ve tried this recipe with 2% milk and it worked great too!

If your skillet seems a bit too hot after cooking the bacon, then reduce the heat to medium-low. It’s better to play the temperature safe before adding in the flour and milk. If too hot, the flour can burn and separate from the milk which would ruin your bacon gravy.Add as much or as little milk as you’d like! Less milk will yield a thick gravy, and more will aid in thinning it out. I like to start with just one cup of milk, then gradually add in more until I reach my desired consistency.Save rendered bacon fat to use in this recipe later on! Say you’re cooking up bacon on a Sunday morning, but don’t want to make this gravy until Wednesday night. Simply transfer 1/4 cup of the bacon fat to an airtight container and store it in the fridge until ready to use. The fat will solidify in the fridge, but melt as soon as it hits the hot skillet.
