To make it faster and easier, I also used sliced avocado instead of the guac I usually get at Chipotle, but feel free to make guacamole if you prefer. I have several other variations for you below, so you can customize your keto burrito bowl with your favorite toppings and flavors.

Here I explain the best ingredients for this steak burrito bowl recipe, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.
Flank Steak – I chose grass-fed beef for this recipe, but conventional beef will work too. You can substitute other cuts like skirt steak, hanger steak, sirloin steak, or top round. Any keto meats (such as chicken) that you would enjoy in a burrito can go in this Chipotle keto bowl recipe — see variations below! Olive Oil – For searing the meat and sauteing the cauliflower rice. You can also use avocado oil or any other heat-safe oil. Lime Juice – Juice from fresh limes tastes best, but bottled works fine for convenience. Taco Seasoning – A zesty blend of spices, including cumin, onion powder, black pepper, paprika, garlic powder, and others. You can buy it pre-made (just watch for sugar or other starchy fillers), or make homemade taco seasoning in minutes! The homemade seasoning already contains salt, but if the one you are using does not, add 1 teaspoon of salt to the meat. Cilantro Lime Cauliflower Rice – Regular Chipotle bowls have white rice or brown rice, but I’m using one made from cauliflower. This also makes the Chipotle keto bowl naturally paleo and whole30. If you’re not a fan of cilantro, plain cauliflower rice works as well. Fresh Garnishes – Including sour cream (omit for paleo/whole30 or dairy-free), tomatoes, red onion, and avocado. Guacamole is also delicious in place of the avocado, if you have time. You can easily customize the toppings, or even whip up the sauce I use for my taco bowls.

Variations & Serving Ideas
There are so many ways to customize this keto bowl! Try these additional toppings and variations to fit your tastes: This is not required, but will make it more flavorful.
Meats – Instead of steak, try beef barbacoa, seasoned ground beef, pulled pork (or carnitas), grilled shrimp, or even teriyaki chicken. You can also season Instant Pot shredded chicken or simply raw chicken with taco seasoning. Cheese – Add a sprinkle of shredded cheddar, Mexican blend, or pepper jack cheese on top. Salad – Swap the cauliflower rice with romaine lettuce or other greens for a keto salad bowl. Vegetarian – To make a vegetarian bowl, replace the protein with a fried egg, fajita veggies, or shredded cheddar cheese. Black beans are not keto, but you can add them if you’re following a more flexible low carb lifestyle. Burrito Bowl Sauces – Try homemade queso, quick fresh tomato salsa (or salsa verde for a twist), or guacamole. Toppings – Fry bell peppers and onions (or any other any other keto vegetables you like) for traditional flavor, or try cilantro lime taco slaw or pico de gallo. Chips – Serve your Chipotle keto bowl with keto tortilla chips if you like crunch.
Storage Instructions
Store: Keep toppings and cooked components separately in the fridge for up to 3 days, without avocado. Avocado is best sliced fresh. Reheat: For the cauliflower rice and steak, microwave, warm on the stovetop, or heat in a 350 degree F oven. Freeze: Only the cooked components of this keto Chipotle bowl can be frozen — avoid freezing the fresh toppings. You can freeze the steak and cauliflower rice for up to 3 months. Thaw in the fridge overnight, then reheat and top with fresh toppings when ready to serve.
