You can totally use thin-cut chicken breasts for this creamy Dijon chicken. The cook time will need to be reduced to 3 to 4 minutes on each side of the chicken breasts, until fully golden. If you have one, use your cast-iron skillet! Cast iron holds onto heat extremely well, which helps cook the chicken and sauce more evenly. As always, I suggest using a meat thermometer to ensure each chicken breast has been cooked to perfection! Fully cooked chicken reads at 165° Fahrenheit. Full-sized chicken breasts take a bit longer to cook than thin-cut chicken breasts, so using an internal meat thermometer can give a peace of mind that it has fully cooked.
