What Makes This Recipe So Good

I love this time of year. There’s usually a party for something, whether it’s Halloween, Thanksgiving, Christmas, football games, bonfires, birthdays – whatever. And with those fall and winter parties comes the absolute best party foods. Don’t get me wrong, I love summer party foods, too, with all the fruits and salads and fresh veggies and bright flavors. But when the weather cools off, out come the slow cookers and dips and rich, deep, warm flavors and heavy comfort foods. This Crockpot baked brie dip is exactly that – rich and warm and so, so delicious, with melty brie and sweet preserves and fruity apple juice. Then you sprinkle some crunchy pecans on top and serve it with crisp apples and toasted baguettes? This is one of those holiday party dishes that everyone just hovers around because it’s too good to miss a bite.The prep for this is SO easy. All you actually have to do is cut the rinds off the wheels of brie. Everything else is just a matter of measuring and dumping. That means you’ll be back to the rest of your holiday prep in no time, but you’ll end up with a dish that tastes like you put a ton of hard work and culinary know-how into it.

Chef’s Tips

This recipe is written to be made in a small, 1.5-quart Crockpot. If you don’t have a slow cooker that small, though, don’t worry! You can actually place a heatproof container inside the ceramic insert of your Crockpot and make your baked brie dip right in that! There are a few things you want to keep in mind if you do that, so check out the Notes section of the recipe card below before you dive in.You absolutely MUST be sure to cut away every last bit of the rind on the wheels of brie before you try to melt the cheese. The rind won’t melt, so any pieces that aren’t cut off will just be these odd little lumps throughout your dip, which is just unpleasant.Like most Crockpot recipes, slow cooker baked brie can be made a few hours before you need it – just use the “warm” setting and stir it periodically to keep it nice and melty! If the dip thickens too much, stir in a little more apple juice to thin it back out.
