🥔 What Makes This Recipe So Good
Diced potatoes are pretty much foolproof! Toss the potatoes in seasoning, then put them onto a baking sheet and straight into the oven. You’ll toss the potatoes halfway through to ensure they achieve an excellent crisp, but there is nothing more complicated than that! The seasoning is very simple, but full of flavor. You can never go wrong with fresh herbs, especially rosemary! Even though there are just a few ingredients in the seasoning, roasting allows it all to blend together, resulting in deliciously seasoned diced potatoes.
👩🍳 Chef’s Tips
You can use any kind of potatoes with this recipe! For smaller potatoes, you may need to adjust the bake time- just keep a watch on your potatoes, and remove them from oven as soon as they have achieved your desired crisp! The flavor is totally customizable. The flavor possibilities are endless with these diced potatoes. You can add different herbs, like oregano, thyme or parsley. If you want more flavor with your potatoes, toss in some garlic powder or onion powder. If you love spice, you could add paprika, chili powder, or cayenne pepper. You can adjust the cook time to your preference! If you want your diced potatoes to be less crispy, take them out of the oven after 20 minutes. Diced potatoes will cook more quickly than you think, so only add about 5 more minutes to the overall bake time if you want them to be crispier!
