Fattoush recipe- another delicious vegan Arabic salad recipe to beat the summer heat. As promised to share a lot of healthy salad recipes this summer I am back with another favorite salad recipe of mine-Fattoush. Originally from Lebanon, this salad is very popular in the entire Middle East.

How is it made?

This delicious vegan Arabic salad Fattoush is made by mixing fresh greens and vegetables with fried or toasted pieces of Lebanese bread known as Khubz. The two main ingredients of the Fattoush recipe which make this easy, simple, fresh salad so unique are fried bread and a Middle Eastern spice - Sumac which is added to its dressing.

How to make Fattoush salad dressing?

The dressing of Fattoush is very simple and is made by mixing lemon juice, olive oil, crushed garlic, dried mint, salt, and Sumac. Sumac not only gives a very nice tangy flavor to the salad but also brightens it up with a bright red color. I love collecting dressing recipes from all over the world because I strongly believe that it is the most important component of a salad. A dressing can easily make or break a salad. What is Sumac and where to find it?

Sumac is a very popular spice made by grounding the dry berries of a plant called Sumac which is mainly found in East Asia, Africa, and North America. This spice was used in a lot of medieval medicines. Native Americans use it to make a drink which they call Indian lemonade or sumac-ade. If you are planning a trip to the Middle East soon, don’t forget to add it to your shopping list. Now coming back to today’s recipe-Fattoush, traditionally fried Lebanese bread is added to it but since I don’t like adding fried things to my salad, I will toast the bread with some olive oil and then add it. If you want, you can use fried bread also. Though you can serve Fattoush as a side dish, it’s so delicious and filling because of the bread that I don’t feel the need to eat anything else along with it. Always make sure not to make this salad in advance or even if you want to then add the bread just before serving otherwise it will become soggy and you don’t want to miss the crunchiness of toasted bread in it.
