So, when you eat out as little as we do, and you don’t eat sugar, restaurant desserts are, like, a once-or-twice-a-year occasion. If I’m going to splurge on dessert, it’s almost always going to be flourless chocolate cake. (Wipes drool from mouth while typing…)

What makes this recipe so good

Flourless keto chocolate cake has got to be the most decadent, most amazing, almost sinful thing on Earth. Not airy like a regular cake, not dense like fudge, not exactly gooey like brownies, this keto chocolate dessert is this sort of magical hybrid of cake and fudge and brownies! As its name suggests, this keto chocolate dessert torte contains no flour — not coconut flour, not cassava flour, not almond flour, not wheat flour. Rather, it achieves this fabulous texture with lots and lots of f-a-t. (I sure hope that’s not a naughty word for you because we’re about to get involved with a lot of fat here.) Eggs, chocolate, ghee or coconut oil… so. much. fat. And if you’re keto, you know that fat is king. If anything’s the flour in this Flourless Chocolate Torte, it’s the cacao powder — which basically doubles the amount of chocolate in the recipe. Notice that this keto chocolate cake recipe is grain-free, gluten-free, nut-free, coconut-free, peanut-free, soy-free, dairy-free, even sugar-free. It is not, however, egg-free, so…

I’m egg-free. Is there a substitute?

I know, I know. This keto chocolate dessert recipe is dairy-free, nut-free, coconut-free, grain-free, soy-free, peanut-free, and nut-free… but the damn thing still has eggs. This keto chocolate dessert does not contain a raising agent, such as baking soda, and relies on eggs to give it a slight rise. Like a souffle, the eggs puff up the keto chocolate torte and give lightness to what would otherwise be a dense and dry cake. Dry torte = no bueno. For this reason, typical egg substitutes — like chia seeds, flax seeds, or gelatin eggs — will not give you a successful result. Sorry, Y’all. I tried. I really tried.

I’m not keto/low-carb. Do I have to use a low-carb sweetener?

You don’t have to do anything. 😉 So, no, a low-carb sweetener is not going to make or break this flourless keto chocolate torte dessert. If you prefer to use “regular” chocolate chips and a “regular” sweetener, go for it! I like Enjoy Life chocolate chips best because they’re allergy-free and have only 3 ingredients. Non-keto/low-carb sweetener options are coconut palm sugar, sucanat, or even muscovado sugar. Notice these are all granulated sweeteners? I don’t recommend trying this keto chocolate dessert torte with honey or maple syrup, as these will affect the liquid ratio of the torte. If you try it and it works, though, please do leave a comment and let me know! However, if you don’t want to use a keto/low-carb sweetener because you’re unfamiliar or unsure about them, I get it.

Unsure about keto/low-carb sweeteners?

I mean, artificial sweeteners are bad enough, right? The potential side effects — like arthritis, Alzheimer’s, and even cancer — of using aspartame, sucralose, and other no-calorie sweeteners just aren’t worth it.
