Garlic Butter
The garlic butter only requires 3 simple ingredients:
Garlic – Fresh garlic works best. You could use garlic powder, but the flavour isn’t quite the same. Butter – Regular salted butter, blitzed in the microwave until melted. Parsley – Again, fresh works best here. Make sure it’s very finely diced.
Dicing the garlic
You essentially want to dice and mash the garlic until it’s like a lumpy paste. Reason being is if you have large pieces of diced garlic, not only are they more likely to burn, but the flavour isn’t as well distributed throughout the butter. Process shots: finely dice garlic (photo 1), use the blade of your knife to mash it (photo 2), pluck parsley (photo 3), finely dice (photo 4), add garlic and parsley to melted butter (photo 5), stir to combine (photo 6).
Grilled Cheese Roll Ups
Once you’ve got the garlic butter out the way, you’re essentially just making grilled cheese roll ups. If you’ve never made grilled cheese roll ups before, it couldn’t be easier.
What Bread to use?
You’ll want to use soft white sandwich bread. Don’t use firm bread (like Sourdough) or they won’t roll properly. Try and make sure the bread is as fresh as possible, just so it doesn’t crack as you roll it. I also recommend staying clear of seeded bread too, otherwise you run the risk of it cracking.
What Cheese to use?
Classic option for garlic bread is mozzarella, and that’s what I’ve used here. But cheddar does also work nicely too. Process shots: remove crusts and roll flat (photo 1), add cheese (photo 2), roll up (photo 3), brush with garlic butter (photo 4), add seam-side-down to non-stick pan (photo 5), gently fry until golden (photo 6).
Can I use sliced cheese instead of grated?
You could use a slice of cheese, just make sure it’s thin and pliable, otherwise they’ll be difficult to roll up.
Is there anything else I could add to these?
I have tried these with a thin layer of Pesto underneath the cheese, which works really nicely! And of course bacon, like my Bacon Grilled Cheese Roll Ups.
What can I do with the leftover crusts?
Blitz them up and use them as breadcrumbs! Great in Homemade Sausages and Meatballs.
How do you ensure they don’t unravel?
Make sure you add them seam-side-down when you fry them. As the cheese starts to melt it’ll glue the seam shut. Also, make sure your pan is non-stick!
