Almond flour – Use a super-fine, blanched almond flour like this for best results. Baking powder – Make sure it’s fresh so that it works properly. Xanthan gum – Optional, but gives great “chew” to the “blanket”. Eggs – Use large size. I prefer cage-free when possible, but any kind will do. Mozzarella cheese – I like to buy pre-shredded to save some time, but you can also shred it yourself. Be sure it’s the low-moisture kind. Cream cheese – Use full-fat for best results. Sesame seeds

How To Make Keto Pigs In A Blanket

Make low carb dough for pigs in a blanket. In a large bowl, stir together almond flour, baking powder, and xanthan gum. Stir in egg until uniform and set aside.

Melt cheeses. In a medium bowl, combine shredded mozzarella and cubed cream cheese. Microwave for 90 seconds, stirring halfway through.

Mix dough. Before cheese cools, add to almond flour mixture and knead with your hands until a uniform dough forms, without streaks. If the dough is sticky, refrigerate to make it easier to work with.

Assemble. Roll out dough for low carb pigs in a blanket into a thin rectangle, about 1/4 inch thick. Cut into 8 long strips…
