Ingredient notes and substitute suggestions
Matcha: Matcha is also sometimes also called green tea powder but don’t mix it up with green tea. Matcha comes in a smooth powdered form and has a stronger flavor than green tea. Matcha comes from younger tea leaves and its processing process is much gentler than the processing of green tea. Use a good quality organic matcha powder otherwise, you won’t get the flavor of matcha. Canola oil: Any neutral flavored oil can be used too. Some people also use vegetable oil but I don’t like the taste of vegetable oil in desserts. Non-vegans may also use unsalted butter. Vanilla extract: Add only a few drops of vanilla extract or skip if you want. The strong flavor of vanilla can easily overpower the gentle flavor of matcha if not added carefully. Milk: Plant-based or dairy both are fine.
Make sure that all your ingredients are at room temperature. Step 1: Put the all-purpose flour, matcha powder, sugar, baking powder, and salt in a small mug. Whisk. Step 2: Add milk and canola oil. Step 3: Mix everything until you get a smooth cake batter. Step 4: Microwave for around 1 minute 15 seconds or until the cake is baked. Your quick and easy vegan matcha mug cake is ready to be enjoyed!
You can enjoy it just like that or with the toppings suggested below. You can also combine two or more topping options to make a fancy matcha mug cake like matcha cake with whipped cream and berries or matcha cake with matcha glaze and sprinkles. It’s best to allow them to reach room temperature without reheating. Reheating them in a microwave may make them chewy.
