What goes in these mushroom noodles?

To make these Asian-style stir-fried mushroom noodles, you will need the ingredients shown below: I am a big foodie and I love cooking too. But to be honest I am a lazy cook who prefers easy, healthy, and tasty recipes. I don’t like spending hours in the kitchen. That’s the reason why most of my recipes are very easy which even beginners can make without any problem. Here also I am sharing another very simple and quick recipe- Easy Mushroom Noodles-Asian style. To make it, you just need to cook some noodles, saute garlic and mushrooms, add the sauces, season with salt and pepper, add noodles, spring onion, toss and your quick lunch or dinner is ready! The combination of slurpy, saucy noodles with the earthy flavor and meaty texture of mushrooms tastes amazing.

Ingredient notes and substitute suggestions

Mushroom:  I have used white button mushrooms, you can use the type of mushroom that you prefer like cremini mushrooms (baby bella mushrooms) or shiitake mushrooms (dry or fresh shiitakes, both are fine). A combination of different mushrooms can also be used. Noddles: Use noodles of choice. Udon noodles, soba noodles, egg noodles, and instant ramen, all are fine. You can use spaghetti too. However, if you use spaghetti to make an Asian dish, don’t cook it al dente. It should be fully cooked but not overcooked and mushy. Spring onion: I love using spring onions in Asian stir fry recipes. You can also add baby bok choy, baby spinach, or garlic leaves. Ginger and garlic: Fresh ginger and garlic will give you more flavor but if you don’t have these ingredients, mix some ginger powder and garlic powder in the sauce mix and use that. Oyster sauce: If you are a vegan or vegetarian, use the oyster sauce that’s made with oyster mushrooms. It’s easily available in a lot of Asian grocery stores. You can also use any other Asian stir-fry sauce of your choice. Cooking oil: I have used vegetable oil but canola oil, olive oil, or peanut oil can be used too.

Serving mushroom noodles

Serve this mushroom noodle stir fry warm or hot. Step 1: Cook noodles following the package instructions. Step 2: Strain the noodles. Don’t discard the water. Step 3: Pour around a tablespoon of oil on the noodles and gently toss. Keep the noodles aside. Step 4: Reserve around ¼ cup of water in which the noodles were cooked. Step 5: In a bowl, mix soy sauce, red chili sauce, vegan oyster sauce, vinegar, salt, and black pepper. Step 6: Heat oil in a large wok.  Add the white part of spring onion, ginger, and garlic. Saute for about a minute. Step 7: Add chopped mushrooms and saute for 4-5 minutes or until the mushroom water dries up. Step 8: Add the sauce mix and cook for around 2 minutes. Step 9: Next, add spring onion greens. Step 10: Saute for a few seconds. Step 11: Add cooked noodles and around ¼ cup of water in which the noodles were cooked. Step 12: Stir fry on high heat for 2-3 minutes. Your quick and easy Asian garlic mushroom noodles are ready to be enjoyed! The dish is full of flavors and doesn’t need a side dish but if you want, you can try one of the following dishes that can be served with it:

Storing and reheating tips

To store, allow the noodles to reach room temperature then transfer to an airtight container. It will be fine for 3-4 days. To reheat, microwave for a minute, stir, and microwave again until evenly heated. Otherwise, transfer to a pan, add a splash of water, and cover the pan with a lid. Reheat on the stovetop on low heat for a few minutes i.e. until heated well. Keep checking and stirring after every 2-3 minutes.

Recipe tips and tricks

Instead of noodles, spaghetti can also be used in this recipe. However, if using spaghetti in an Asian recipe, don’t cook it al dente. It should be slightly softer in Asian recipes. If you cannot find vegan or vegetarian oyster sauce, feel free to use any other Asian stir-fry sauce of your choice. You can also add vegetables like bell peppers, broccolini, greens beans, and snow peas to this dish. As the sauces already have salt in them, add more salt carefully and only if required. Always use a large skillet or wok for stir-frying. It makes stirring the food easier. Stir fry on high heat to get the best result. As the Asian style stir-frying is done on high heat, keep all the ingredients ready and near the stovetop before starting the process. To make more spicy mushroom noodles, drizzle some chili oil or chopped green chilies on top.
