I think I’ve mentioned it before, but here in  Memphis, we take our BBQ pretty seriously. Check out the lovely grill marks on these sweet and smoky slices of Orange Glazed Grilled Zucchini. They will certainly make an appearance at our next BBQ event! – Cheryl How is it possible that I didn’t like zucchini as a kid?!  Now, I just can’t get enough grilled zucchini.  My go-to is simply sprinkled with garlic powder, salt and pepper, but I thought to myself, “Self, it’s time to bring in some flavor variation.”  And Self decided some natural sweetness would be, well, “sweet!” Is there anything better than cooking over an open flame?  I mean seriously, there’s just something so primal about using fire to cook, isn’t there?  You know I’ve been grilling all summer and I’m dreading the end of BBQ season.  Even if I have been known to BBQ in the snow at 3:00 am… A simple orange glaze for BBQ’d zucchini screamed fresh and flavorful.  But while thinking about what fruits I wanted to use for this glaze, there was a second contender!  Rhubarb also wanted a shot at putting a twist on the grilled zucchini.  And guess what?  It sucked.  –Just kidding!  It was awesome too!  But you have to come to The Primal Desire to find that version (https://theprimaldesire.com/grilled-zucchini-with-rhubarb-glaze).  Look at you travelling around the internet!  And who knows what else you’ll find while you’re there. So there you have it: new easy ways to show zucchini that you love it more than eggplant emojis!  ?   Orange Glazed Grilled Zucchini 3 small or 1 large zucchini 1 navel orange (juiced – about half a cup) ¼ tsp honey Salt to taste Stir orange juice, honey, and a pinch of salt and reduce over medium-high heat. Continue to stir as juice bubbles.  Remove from heat when the juice mixture is about half the volume and thick enough to coat your spoon. Preheat BBQ on high heat. Slice zucchini(s) in lengthwise strips, approximately 1/4-inch thick.  Brush 1/3 of the orange glaze on one side of zucchini just before grilling.  If the glaze is too thick, mix in enough water that it will easily brush onto the zucchini. Reduce BBQ to medium burner setting. Grill zucchini slices with the glaze-side up until the zucchini starts to soften and the bottom side starts to develop grill marks. Turn zucchini slices, and brush the already-grilled side with another third of the glaze. Remove from BBQ when the second side is grilled.  Brush on the remaining orange glaze and top with a light sprinkle of salt. Tip:  be sure that your grill is clean before cooking the zucchinis.  I like to use a cut onion rubbed on the grill to help keep food from sticking to the grate.
