I haven’t felt this patriotic since the last Olympics. Leo had just learned to mimic hand motions, and he would fist pump along to chants of U-S-A! U-S-A! So we did that a lot, obviously. Or maybe that time that the US team did kind of OK in the World Cup, and I bought an American flag bandana and wore it around my head, Duck Dynasty style. Except then the US dropped off, and I resumed my commitment to Lionel Messi in all forms (including sort of naming my child after him [and my late grandfather, of course], kind of? NBD).
But this? Paleo red, white, and blue cocktails that could not be more perfect for 4th of July cocktails or Memorial Day cocktails or Labor Day cocktails or Tuesday afternoon cocktails (no judgment)? This is a new level of patriotism over here. And coming mere days after my paleo American flag pie with strawberries and blueberries and freedom and fries and freedom fries – I’m a regular Paul Bunyan over here. Was Paul Bunyan patriotic? Probably. Maybe. It’s possible. Er… yeah.
The otherwise dismal, non-festive expression of my patriotism notwithstanding, these paleo red, white, and blue cocktails are perfect for summer holidays. If you’re looking for 4th of July cocktails, Memorial Day cocktails, or Labor Day cocktails, you’ve got your recipe! These refined-sugar-free cocktails are fruity and boozy and festive and super stunning. On top of that, they’re pretty dern easy and full of healthy ingredients! These paleo red, white, and blue cocktails are rum-infused layers of strawberry, pineapple-coconut, and blueberry. There’s no refined sugar, and the booze is definitely there without tasting strong. Kind of the perfect recipe for a paleo summer cocktail, don’t you think? You’ll want to be careful in layering these. After severals rounds of testing (oy), the layers are quite frozen, but you still want to be careful when placing the layers on top of each other. I use a disher to help keep the portions equal and place them gently.
