Peas are one of my daughters’ favorite veggies, and this soup was a hit with them — and with me too, because it was so easy. Using just a few simple ingredients (including fresh or frozen produce!), this healthy soup takes a few simple steps and comes together with just minutes of hands-on prep. Peas show up in many of my comfort food recipes like sweet potato shepherd’s pie, quick fried rice, creamy chicken pot pie soup, a healthy tuna casserole, and can even be added to a sausage kale soup — but in this dish, they play the starring role and create a vibrant green color and rich aroma.
Ingredients & Substitutions

Oil – Used for sauteing. I opted for olive oil, but you could use avocado oil or any heat-safe oil you like. Onion – For the best flavor and texture, use diced sweet or yellow onions. Garlic – I use 2 fresh garlic cloves, but you can also substitute 1 teaspoon jarred minced garlic or 1/4 teaspoon garlic powder. Peas – You can use fresh or frozen peas. Fresh ones give the soup a bright and vibrant flavor, while frozen ones have a more concentrated sweetness. Feel free to add in extra veggies such as carrots, celery, broccoli, or spinach. Avoid using dry green split peas here, as they will take much longer to cook compared to the other ingredients. Vegetable Stock – Chicken broth or bone broth will also work, if you don’t need it to be vegetarian. Heavy Cream – Adds a richer, creamier texture to the dish. It also gives a hint of sweetness and a velvety finish to the soup. If needed, substitute plain Greek yogurt, sour cream, or coconut milk for a dairy-free option. Sea Salt & Black Pepper – To taste. You could also garnish with thyme for extra flavor.

Store: Place leftovers in an airtight container in the refrigerator for up to 4 days. Meal prep: Simply make a large batch, split it into individual portions, and store in airtight containers. Reheat: Warm soup in the microwave, or on the stovetop over medium heat.
