Make a batch of peach puree, then leave out some champagne flutes and a chilled bottle of Prosecco for your guests to pour themselves. Everyone can fix their own peach Bellini with their ideal peach-to-Prosecco ratio!

Fresh Peaches – Remember to peel your peaches before dicing and blending. No one wants peach skin bits floating in their Bellini! If you’re in a pinch and can’t find fresh peaches, you can use frozen, but fresh is definitely best. Sugar – Make this added-sugar-free by using granulated Swerve, honey, stevia, or monk fruit sweetener instead of sugar. Lemon Juice – Brings out a delicious tart flavor in these Bellinis and helps to balance out the sweetness of the peaches, while offering a bit of vibrance to the whole cocktail. Prosecco – Peach Bellinis are traditionally made using Prosecco, but you can use any sparkling white wine you’d like! I’d recommend a crisp Cava or Champagne instead.

Looking to chill your drink? Add a frozen peach to the bottom of your glass! This will act as an ice cube, without watering your cocktail down.If you’re concerned about pulp or peach chunks in your Bellinis, you can strain your peach puree through a fine-mesh strainer before serving.Adjust sugar amount to your liking. If your peaches are very ripe and sweet you might want to decrease the amount of sugar you use. On the other hand, if your peaches are less ripe, you’ll probably want to add an additional tablespoon of sugar to sweeten things up.
