Also known as aloo sandwich or aloo matar sandwich, this sandwich is stuffed with cheese and a mashed potato filling flavored with Indian spices and fresh herbs. The main ingredient that makes this sandwich stand out is the refreshing and slightly spicy green chutney. It gives a delicious kick to the flavors of the potato sandwich. Aloo is the Hindi word for potato and masala means spice. So, masala aloo sandwich means spicy potato sandwich.

Boiled potatoes: Any variety of potatoes can be used to make this sandwich.Green peas: Fresh and frozen both are fine. I have used frozen peas, they get cooked faster. If you are using fresh green peas, cook them for a longer time or first boil them and then use in the filling.Garam masala: It’s a blend of Indian spices with a very strong flavor so add in moderation. If you don’t like garam masala or don’t have it, skip it. There are a lot of other ingredients which will add flavor to this sandwich.Coriander powder: It’s the powdered form of dried coriander seeds. You can buy it from the spice section of any South Asian grocery store.Cheese: I have used mozzarella. Feel free to use any melting cheese of your choice. You can also mix different melting cheeses and then use it. Vegans may skip the cheese or use vegan cheese.Green chutney: Also, known as mint chutney, it’s a slightly spicy and very refreshing Indian chutney made with mint leaves, cilantro, garlic, and a few other Indian spices. Though nothing can beat a homemade green chutney that is full of flavors if you want, you can buy ready-made green chutney from an Indian grocery store. To be honest, I have never tried store-bought green chutney. It’s so easy to make that I always make it at home. If you want, you can check my recipe for mint chutney. Also, if you don’t like mint chutney, use any other chutney or spread of your choice.
Step 2: Add finely chopped onion and cook until the onion turns translucent. Steps 3 and 4: Add green peas and a few tablespoons of water. Steps 5 and 6: Cover the pot and cook until the peas turn soft and are nicely cooked. Step 7: Add coriander powder, red chili powder, ground black pepper, and garam masala. Mix and saute for a few seconds. Step 8: Add chopped ginger and green chilies and saute for a few more seconds. Step 9: Add mashed potatoes and salt. Mix and cook for 1-2 minutes. Step 10: Finally, add chopped cilantro. Mix and switch off the stove. Allow the filling to reach room temperature. Step 11: Apply green chutney on one bread slice. Step 14: Top it with some shredded cheese. Step 16: Toast from both sides until the aloo sandwich turns golden brown and crunchy. Your Indian-style grilled potato sandwich is ready to be enjoyed! Indians generally prefer eating sandwiches for breakfast with a cup of chai. You can pack them for lunch too. They can be served with any dipping sauce or a crunchy salad on the side. A potato sandwich can also be enjoyed as a filling snack. It’s best to eat it within the same day as chutney will make the bread soggy. For some advance preparation, make the potato filling, store it separately in an airtight container and refrigerate for 1-2 days. Also, store the green chutney in airtight containers and refrigerate for almost a week. Assemble the sandwich only when you want to enjoy it.
