Even during school and college days this masala peanut chaat, instant noodles, and chai (Indian tea) helped me in remaining awake during late-night study sessions. It needs only a handful of basic ingredients, gets ready in just 5 minutes, and always tastes delicious!

To make roasted peanut chaat, only a handful of ingredients are needed:

Roasted peanuts: Salted or unsalted both are fine. Onion: Preferably red onionTomato: Pick a less juicy, firm variety of red tomato. Green chili peppersFresh cilantro: Mint leaves can be added too.Fresh lime juiceChaat masala: It’s an Indian blend of spices which is used in a lot of Indian street food recipes especially chaat. It’s also sprinkled over salads and fruits to enhance the flavor.Roasted cumin powder: To make roasted cumin powder at home just dry roast cumin seeds in a pan on low flame until they become fragrant. Allow them to reach room temperature and then grind in a grinder to make a fine powder. Red chili powder: You can choose the type of red chili powder depending upon your heat tolerance. How to make?

Making quick peanut chaat takes just 5 minutes. All you need to do is finely chop onion, tomato, green chili peppers, and cilantro. If you wish, remove the tomato seeds. Put the roasted peanuts, all the chopped vegetables, cilantro, and seasoning in a large bowl. Squeeze fresh lime juice. Mix everything. Check and adjust the seasoning. Enjoy!

Can it be made in advance?

No, if left with vegetables and lime juice for long, the peanuts will turn soggy. You can chop everything in advance but mix only when you want to eat the peanut chaat.

Recipe tips and tricks

Instead of roasted peanuts, boiled peanuts can also be used to make chaat. A similar chaat can also be made using skinned roasted kala chana (whole bengal gram).As chaat masala already has some salt to it, add more salt carefully.This is a quick peanut chaat recipe but if you have time, some chopped boiled potatoes, pomegranate arils, sev, and chutneys can also be added to it.If your heat tolerance is low, remove the seeds of green chilies.
