I could have never imagined these ingredients together in a dish. But now It is a family favorite and I keep returning to this recipe. Doesn’t require a ton of stuff, a bag of frozen shrimp, spaghetti (or any noodles) and a few pantry staples are all you need to whip up a quick dinner. It is also one of those versatile recipes, in which you can add or substitute ingredients as per your taste or convenience. Though it is not an authentic Asian noodles recipe, this Butter Garlic noodles with Shrimp is so good, that you can’t stop yourself from having a second serving.
Marinate and sear shrimps
Make sure you have drained the shrimps well before adding soy and pepper. Let it rest for 10-15 minutes. Then in a hot pan sear shrimps 3 minutes undisturbed, flip and cook for another 2 minutes. Cook on medium- high heat for a beautiful golden sear. Remove cooked shrimps from the skillet and keep aside. Scarp the bottom of the pan to release stuck bits. let it simmer for a minute or so for the sauce to come together. Finish of the dish by stirring freshly grated parmesan cheese and green onion.
For perfectly seared shrimps, make sure you drain them really well before marinating. Shake off the extra marinade before adding to the hot skillet. Spread shrimps in a single layer while cooking (check out the video) instead of over crowding the pan. Rubbery overcooked shrimps is a big let down. 4-5 minutes depending on the size is just enough time for juicy shrimps. All the sauces are quite salty, so while cooking pasta I add less salt then I generally would add. You could add 1/2 teaspoon of sugar if you feel the sauce is too salty. It goes without saying that freshly grated parmesan cheese is any day better. Buy a block and grate fresh. I would suggest to measure the sauces rather than eyeballing, as these are quite salty and
Reheat- While reheating sprinkle some water to loosen the noodles and microwave it.
