Here I explain the best ingredients cooking stuffed pork chops, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.

Pork Chops:

Pork Chops – I used boneless pork chops because they are easier to stuff, but bone-in will work fine as well. Make sure to get thick-cut pork chops, so that you can easily slice them for filling. The store may have them under many different names (loin chops, rib chops, and so on) — learn more about choosing pork chops in my posts about cast iron pork chops and baked pork chops. Olive Oil – Used for browning the baked stuffed pork at the end on the stove top. You can use regular olive oil, extra virgin olive oil, avocado oil, or just about any heat-safe oil. Butter can work, but you’ll have to watch closely to avoid burning it. Sea Salt & Black Pepper – For easy seasoning on the meat. Kosher salt is also fine instead of sea salt. If you want to amp up the flavor, add other spices, like paprika, garlic powder, or onion powder. Toothpicks – These will help keep the filling inside the chops during cooking.

Stuffing:

This recipe for stuffed pork chops uses a simple mushroom Swiss stuffing with the ingredients below, but you can see other stuffing variations further down!

Mushrooms – I use my sauteed mushrooms recipe for extra flavor, but any canned or cooked sliced mushrooms (such as oven roasted mushrooms) will work. Canned is a shortcut that doesn’t require cooking, but in my opinion the taste is worse than fresh cooked mushrooms. If using plain mushrooms instead of my sauteed mushrooms recipe, I recommend adding 1/4 teaspoon of salt to the filling. Swiss Cheese – You can use pre-sliced cheese or shredded. If using sliced, chop it so it will mix more easily into the stuffing. If you’re not a fan of Swiss, a combination of Parmesan and mozzarella cheese makes a good substitute. Parsley – With such a simple ingredient list, the flavor of fresh parsley (versus dried) tastes best.

How Long To Cook Stuffed Pork Chops?

Cooking time for stuffed pork chops is approximately 15-20 minutes in the oven at 350 degrees F, depending on their thickness. For a nicely browned outside and juicy inside, cook them in the oven until the internal temperature reaches 140 degrees F, then pan sear for 30-60 seconds per side, until internal temperature reaches 145 degrees F. Use a meat thermometer to check for doneness. Internal temperature will rise more during the final step, so do not cook to full doneness (which is 145 degrees F) in the oven.

Storage Tips

Store: Keep leftovers in an airtight container in the refrigerator for up to 3 days. Meal prep: Stuff pork chops ahead of time and store in the fridge for a day or two before cooking. You can also just prepare the stuffing in advance if you like. Reheat: For best results, place the pork chops in a baking dish with a little chicken broth. Heat in the oven at 350 degrees F, until warm. The microwave also works, but can dry them out more. Freeze: You can freeze stuffed pork chops baked or raw, both ways work! Wrap them tightly in plastic wrap, then store in a freezer safe container for up to 3 months. Thaw overnight in teh fridge before cooking as instructed.

Stuffing – Many stuffed pork chop recipes use actual stuffing inside, like the kind you’d make for Thanksgiving. Feel free to make your favorite recipe and tuck it inside your pork chops. You can also make cauliflower stuffing for a lightened up version with similar flavors. Spinach – Use the filling from my spinach stuffed chicken breast recipe inside pork chops instead of chicken. Caprese – Layer fresh mozzarella, tomato slices, and fresh basil inside. Veggie – Almost any kind of sauteed vegetables work well as a filling, together with your favorite cheese. You can also change up the mushroom Swiss filling by simply adding sun-dried tomatoes, caramelized onions, chopped celery, roasted red peppers, or roasted garlic. Cranberry – For a tangy fall flair, make stuffed pork chops with a mixture of fresh cranberries, goat cheese, fresh rosemary, and fresh thyme. Apple – Tuck thin apple slices inside, along with crispy bacon (or turkey bacon), pecans, and sharp cheese for contrast.

Simple Veggies – Prepare sauteed zucchini (pictured above), or any sauteed vegetables you like, while this stuffed pork chops recipe is baking. Or turn up your oven afterward and make smashed brussels sprouts or oven roasted green beans. Potatoes – Make roasted potatoes (or faster air fryer potatoes) or Instant Pot baked potatoes for the ultimate comfort food meal. For healthier options, try mashed cauliflower, roasted rutabaga, or a radishes recipe. Salads – Stuffed pork chops are a rich main dish, so lighten up your side dish with a colorful pomegranate salad or quick tomato cucumber salad.
