Russet Potatoes – Most, if not all, french fries are made from russet potatoes. Russet potatoes have a thick skin and soft inside. Therefore, once baked, the skin will roast up super crispy while the inside remains buttery soft. To prepare your potatoes for this dish, start by washing them well under cold water. Once clean, cut them into even-sized matchsticks. The thickness is up to you, though be sure to cut them into as evenly-sized pieces as possible. This will ensure more even baking! Truffle Oil – There are two types of truffle oils on the market, all natural truffle oil and synthetic truffle oil. All natural truffle oils contain (you guessed it!) real, natural truffle in it. Whereas the synthetic oil simply mimics the flavor of truffles through “natural flavors.” The natural truffle oil is the way to go in this parmesan truffle fries recipe. Though if you can’t find any, the synthetic will still taste great! Though if using synthetic oil, reduce the amount you use to just one teaspoon as the flavor if much more concentrated. Parmesan Cheese – I always recommend purchasing a block of parmesan cheese and grating it yourself for recipes. This is because store-bought grated cheese contain unnecessary fillers and carbs. Also, I’m a firm believer that freshly grated parmesan tastes better! Therefore, purchase a nice block of parmesan cheese and freshly grate it directly over these truffle fries. Place your fries on the bottom oven rack when baking! This places the fries closer to the heat, making them even crispier. If using two baking sheets to cook your fries, then simply switch the location of the sheets in your oven at the halfway mark!Taste and adjust the seasoning of your parmesan truffle fries however you’d like!
