What Makes This Recipe So Good
When I say it tastes JUST LIKE the guacamole from Chipotle, I mean it tastes JUST LIKE the guacamole from Chipotle! I may or may not have developed this recipe side-by-side with a big bowl of guac straight from the source, tweaking and perfecting the ingredients until I had a bite-for-bite copycat that would fool even the savviest of guacamole eaters. The sacrifices I make for this blog, y’all.It’s such a simple recipe. You don’t need any fancy ingredients or special equipment – just a bowl, a potato masher, avocados, red onion, cilantro, jalapeños, limes, and salt. Essentially, you just put everything in the bowl and stir it together!This is one recipe you can easily scale up to feed a large group or scale down to feed just you. Just be sure to taste as you go and adjust the salt and lime juice as needed to keep everything perfectly balanced!
Chef’s Tips
Make sure you use enough salt! If you’re like me, you tend to shy away from overdoing the salt at home. Well, I can guarantee they’re not shying away at your favorite restaurants! Using enough salt in this guac is key to really nailing that burrito bar flavor you’re looking for.Ever notice that Chipotle’s chips have this really delicious tang to them? To mimic that, use lime-flavored chips! The lime on the chips adds an extra brightness to the guac that’s really, really nice. Make your own by just squeezing a little lime juice over your tortilla chips, or use store-bought lime flavored chips.So, the amount of lime juice you’ll get from one lime is entirely dependent upon the lime itself. So, rather than just relying on “juice from 1 lime”, you’ll want to add some lime juice, then taste the guac, then add a little more juice, then taste again, etc. Repeat the cycle until you’ve really perfected that flavor (do the same with the salt, too!).Chipotle’s guacamole isn’t chunky, like, at all, so don’t be afraid to mash the living daylights out of the avocados before stirring in the rest of your ingredients! That really smooth avocado consistency will help your guac taste and feel even more like the restaurant’s.
