Unlike me, my husband loves desserts and ice creams, popsicles, frozen yogurt, or any type of frozen dessert is his favorite. So, I keep on looking for ideas to let him enjoy these treats without feeling anxious by making their healthier versions. This tropical popsicle which is refined sugar-free, vegan, gluten-free, and has all the nutritious tropical ingredients is one such recipe. You can enjoy it without guilt even if you are a healthy eater. It’s a healthy summer snack option for kids too. I love tropical recipes and keep on trying them  in my kitchen during summer. You just need to throw in all the ingredients in a blending jar, blend, pour into the popsicle molds, and freeze. To make them even more appealing instead of blending the fruits and coconut milk together, create separate layers of coconut milk and fruit puree. In that case, add sweetener to the coconut milk as the fruits are already sweet or divide the sweetener between coconut milk and fruits depending upon their sweetness. Add grated coconut to the coconut milk. Pour a layer of coconut milk into the molds. Freeze for 15-20 minutes. Next, add the fruit puree-freeze again for a few minutes and repeat the process until the mold gets filled to the top. Allow freezing for at least 5 hours.

What goes in tropical popsicles

Tropical fruits: I generally use mango and pineapple but you can also add other tropical fruits like kiwi, banana, and papaya. Try using the sweet variety of all the fruits. Though nothing can beat the taste of fresh fruits if you don’t have them, canned or frozen are also fine. Coconut milk: Coconut milk gives a nice, creamy base and tropical flavor to these popsicles. Lime juice: Lime juice balances the sweetness of fruits and coconut milk. It gives a nice tangy hint to the popsicles and enhances their freshness. However, if the fruits that you are using are already slightly sour don’t add lime juice. Grated Coconut: Freshly grated coconut gives a very interesting texture to these popsicles but adding it is optional. If you don’t have it skip it, the popsicles will still be delicious. Sweetener: Use any sweetener of your choice. If you are vegan go for plant-based sweeteners like maple syrup or stevia. Otherwise, honey or sugar can also be used. The quantity of sugar will vary depending upon the sweetness of the fruits you are using. If they are already sweet enough, there is no need to add any extra sweetener.
