Vegan Arabic Sandwich with spicy chickpeas and eggplants, is one of my favorite sandwich recipes. This delicious protein-rich vegan sandwich can be eaten at any time of the day and is very filling. If you are looking for healthy recipes which are not boring then you must try this recipe. I became vegetarian after shifting to Dubai, most of the people will laugh at it as Dubai is famous for its non-vegetarian food. During our initial days in Dubai we wanted to explore the local food but since there were not many vegan/ vegetarian options available in Arabic cuisine, most of the time we ended up eating falafel wraps. Though we love falafel wraps, it was boring to order the same snack every time we wanted to eat something outside. I wonder why restaurants don’t get more creative in making their vegan/ vegetarian Arabic wraps and sandwiches. There are so many delicious vegan/ vegetarian side dishes available in this cuisine. You can create a great sandwich just by mixing a few of them. Since we couldn’t find them in the restaurants, I thought of creating my own vegan Arabic Sandwiches and have some great recipes now. Today I am sharing the recipe of Vegan Arabic Sandwich with spicy chickpeas and eggplants. I will share more vegan Arabic Sandwich recipes on my blog soon. I am sure not only vegan & vegetarians but the even meat lovers will relish these recipes. They are perfect to be packed in your office/school lunch box. Here in this recipe, I have used Muhammara as a spread.  I have already shared the recipe of Muhammara on my blog a few days ago if you have missed it you can check it here. However, if you don’t have Muhammara or don’t want to make it, you can also use Hummus, Baba Ganoush or any other spread of your choice. The recipes of Hummus & Baba Ganoush are also available on my blog. Also, you can also any type of thick Arabic pocket bread like Pita bread for this sandwich. Just make sure that it’s strong enough to hold the stuffing. If you couldn’t find any Arabic bread, you can also make a sandwich using normal bread. However, in that case just slightly mash the chickpeas. You can also create vegan Arabic wraps using this stuffing if you have tortilla or any thin Arabic bread. So, next time you are hungry and want to try something healthy and delicious, do try out this vegan Arabic sandwich.
