So I decided to use it as inspiration to create a homemade version of vegan chorizo for these tacos. To do that, I used a mix of crumbled tofu, because I already know that I LOVE tofu tacos, as well as finely chopped walnuts, which worked great for adding texture to this vegan meat sauce. I added a mix of seasonings including savory, hot and warming spices, for maximum flavor. These tacos were absolutely scrumptious, and can be ready in about thirty minutes!
